Luscious Lasagne! Paleo, Gluten, Grain & Dairy Free

This is one of my favourite dishes to make!

I made an extra special one for mother's day last weekend and thought I would share the deliciousness...

(All I can say is sorry that it's not taste/smell-o-vision!)

There's a few points to make on this one.

It is quite a bit easier if you have a blender/hand blender/food processor that will power through the bechamel ingredients, but it isn't impossible if you don't.

Something does need to grind up those cashews so they combine well. You could even try some good old elbow grease and get out a pestle and mortar!

*Top tip (if your not working with a powerful blender): Soak the cashews in water for a couple of hours before using them, this will make them softer and easier to work with*.

Once the cashews are combined, the rest could be done on a stove top - to thicken, heat and cook.

The Vitamix is very good at being left running, and can heat ingredients from raw, if necessary (successfully makes custard, soups, nut butters etc).

The bechamel in this "lasagne" can be used for all sorts of really delicious recipes and bakes (spinach or no spinach!). For example, try it with spiralized veggies as a "pasta carbonara" ♥

I usually use a mix of thinly sliced veggies as layers. However, this time the only veggie I had in that could pass as a "slice", were sweet potatoes - cabbage wouldn't quite cut it!

So, you could use a combination of your favourites e.g. carrots, celeriac, swede, squash, courgettes etc.

P.s. This is a really great way to sneak in a tonne of vegetables for picky eaters!
